* 5-8 medium-sized shrimps, cleaned, shelled and deviened
* 100 grams squid, sliced
* 2 cups cooked rice
* 1 tablespoon chopped garlic
* 1 tablespoon chopped chilies
* 1 tablespoon sliced lemongrasses
* 3-5 kaffir lime leaves, torn
* 5-8 pieces sliced galangal
* 1.5 tablespoons chili paste
* 2 tablespoons fish sauce
* 1 tablespoon sugar
* 1.5 tablespoons lime juice
* fresh vegetables (cucumber, tomato, lime cut halve, etc.)
* fish sauce with chopped chillies
* cooking oil
1. Heat oil in a wok over medium heat. Add chopped garlics, chillies, sliced galangals and lemongrasses. Stir fry until fragrant. Then add chilli paste, kaffir lime leaves and keep stirring.
2. Add shrimps, squids and stir until nearly cooked.
3. Season with fish sauce and sugar. Stir until mixed well, then add cooked rice. Turn up to high heat and stir quickly until all ingredients mixed thoroughly. Turn off the heat, then add lime juice and stir again until mixed well.
4. Transfer to a serving plate. Serve immediately while still hot with prepared fresh vegetables and chopped chillies in fish sauce.
Note : Thai people love to serve Fried Rice with chopped chilies in Fish Sauce for better taste.
