* 4 mackerel fishes (remove bone, use only fish meat)
* 100 grams glass noodle
* 1 tablespoon lemongrass, finely chopped
* 1 tablespoon shallot, finely chopped
* 1 tablespoon chopped chilies
* 1/2 cup chinese kale, cut into 1" long
* 2 tablespoons lime juice
* 1 tablespoon fish sauce
* 1 teaspoon sugar
1. Blanch glass noodle until soft. Drain and set aside.
2. Prepare the salad sauce by mixing lime juice, fish sauce, sugar, chopped chilies, and chopped shallots. Stir until all ingredients mixed well.
3. In a big bowl, add mackerel fish meat, chopped lemongrass, glass noodle, chopped kales, and the salad sauce (prepared in step 2). Stir softly until all mixed well.
4. Transfer to a serving dish. Serve immediately with fresh vegetable and hot steamed rice.
